Stuffed bacon wrapped dates are the perfect make-ahead appetizer for any party! This recipe comes together in minutes and the parchment paper makes for a very easy clean-up.
21 pitted Medjool dates
7 slices of bacon
1/2 cup Sweet Potato Pie Nut Butter
Preheat oven to 375 degrees
Line a half sheet baking tray with parchment paper.
Butterfly the dates and spread 1 tsp of nut butter over each date.
Close the dates and wrap with 1/3 a slice of bacon for each date. Secure the bacon with a toothpick and place on the baking tray.
Bake for 25 minutes or until the bacon is nice and golden brown.
Let cool and serve at room temperature.
